White Chicken Chili December 9, 2010

This is one of our favorite meals! It’s fast and easy and tastes even better the next day. 🙂

1 tbs olive oil

1 medium onion, chopped

1 tsp minced garlic

1 1/2 lbs chicken breast

1 (32 oz.) carton of chicken broth

2 (15.8 oz.) can of great Northern beans, rinsed and drained

1 (1.25 oz.) package of white chicken chili seasoning mix

1 (11oz.) can of shoepeg corn, drained

In a large heavy-bottomed pot, heat oil over medium heat; add onion and garlic. Cook, stirring occasionally for 6-8 minutes, or until tender. Stir in chicken, chicken broth, beans, seasoning mix, and corn. Bring to a boil; reduce heat to low and simmer, stirring occasionally, for 30 minutes to an hour. The longer it simmers the better. ENJOY! 🙂
