Sweet & Sticky Orange Chicken May 9, 2011

We tried a new recipe tonight and it was awesome!! I got the recipe HERE. The only thing I did different from the directions was I kept the chicken in the pan when I added the sauce. I served it over brown rice and VOILA! Enjoy!! πŸ™‚


Creamy Crockpot Chicken March 29, 2011

I found this recipe and we just tried it tonight. Oh my word…it is AMAZING!!! You must try it!

Creamy Crockpot Chicken

3 boneless/skinless chicken breasts

1/2 cup of butter

1 package of dry Italian salad dressing mix

1 can of cream of mushroom soup

1/2 cup of white wine

4oz. of onion & chive cream cheese

1 package of pasta(any kind will do), boiled

Place chicken in the crock pot. In a sauce pan, melt butter. Stir in Italian dressing mix, soup, cream cheese and wine. Pour over chicken and cook on high for 4 hours or until chicken is fork tender. Serve over your favorite pasta and ENJOY!



White Chicken Chili December 9, 2010

This is one of our favorite meals! It’s fast and easy and tastes even better the next day. πŸ™‚

1 tbs olive oil

1 medium onion, chopped

1 tsp minced garlic

1 1/2 lbs chicken breast

1 (32 oz.) carton of chicken broth

2 (15.8 oz.) can of great Northern beans, rinsed and drained

1 (1.25 oz.) package of white chicken chili seasoning mix

1 (11oz.) can of shoepeg corn, drained

In a large heavy-bottomed pot, heat oil over medium heat; add onion and garlic. Cook, stirring occasionally for 6-8 minutes, or until tender. Stir in chicken, chicken broth, beans, seasoning mix, and corn. Bring to a boil; reduce heat to low and simmer, stirring occasionally, for 30 minutes to an hour. The longer it simmers the better. ENJOY! πŸ™‚

We recently purchasedΒ  a new cookbook called So Easy by Ellie Krieger. It has TONS of healthy recipes for breakfast, lunch, supper and dessert. Here is one we tried today.

Prosciutto Wrapped Cod with Pesto Green Beans and Potatoes

It was amazing and only had 410 calories for this whole plate full of food! This recipe is definitely a keeper and will appear on the Pulley table again very soon!

Creamy Chicken Quesadillas January 19, 2010

This is one of my favorites! I make this recipe and only make half that night. I freeze the other half for a quick supper for another night. And I forgot to take a pic last night so stay tuned for a pic the next time I make it!

  • 1 can of cream of chicken soup
  • 2/3 cup of sour cream
  • 2 tsp of chili powder
  • 2 chicken breasts boiled and shredded
  • 3/4 cup of cheddar cheese
  • 1 small onion chopped
  • roasted green chilies(add as many as you want till it’s as spicy as you want it)

Mix all ingredients together and spread in between 2 tortillas. Cook like you would any other quesadilla. ENJOY!

We tried a new recipe tonight and it was so good, I thought I’d share it. In an effort to eat healthier, I searched food network’s site and this came up.

Chicken Sate with Spicy Peanut Dipping Sauce

I made brown rice to go on the side(actually Kevin did) and it was DELISH! I was going to take a picture of the final product, but I had to run out the door before it was done and forgot to ask Kevin to take one so you get the professional one. πŸ˜‰

On another note, here are the highlights of our day:

-Jack flipped over the side of the couch and fell on his head. He bit his tongue on both sides. I guess he didn’t get the memo the other 10 times I told him that playing on the couch like that wasn’t a good idea.

-The Christmas decorations are finally coming down. I love putting them up, but I despise taking them down.

-PB&J was the lunch of choice. I’m not sure why(I hate PB&J), but it seems to be the norm around here.

-And my favorite one today…Jack was walking around threatening Kaylynn that he was going to spank her. It was quite the sight. She didn’t seem real intimidated though.

All in all, not a very eventful day. All the kids are tucked in bed and I’m ready to relax.
